Hello Yogis and Foodies!
It’s my favorite time of year; backyard BBQ season! For me there is nothing better than spending the day with friends, family, and dogs, eating, drinking, and enjoying each others company. The only thing you have to worry about that day is what you’re going to bring! I have the best recipe for you all to try that is VEGAN but trust me the carnivores will be drooling. Try this delicious vegan bean salad at your next BBQ and bring the recipe with you because I promise you will be asked for it.
Jackie’s Vegan Bean Salad
You can prepare this salad the night before or morning of but make sure it has at least 4 hours to chill in fridge before serving.
1 can of black beans (drained)
1can of black eyed peas (drained)*you can substitute white beans if you can’t find black eyed peas
1 can of sweet corn (drained)
1 small jar of pimento (drained and chopped, the recipe can go without this ingredient if needed)
1 chopped small to medium red onion
2 chopped bell peppers (I like red and yellow)
1/2 cup of sugar
1/2 cup of oil
1/2 cup of apple cider vinegar
In a large bowl combine all beans and chopped veggies, mix well but be careful not to mash your beans! In a small saucepan combine sugar, oil, and apple cider vinegar over medium heat. Be sure not to boil or even simmer this mixture, just get it warm enough for the sugar to dissolve completely and then immediately remove from heat. Pour your sugar, oil, and cider mixture over the beans and veg and again mix well. Add salt and pepper to taste if desired. Allow to chill in the fridge for at least 4 hours but preferably over night. And the only thing left to do is enjoy!
